We process the basil directly in the vicinity of the fields harvested. This reduces transport times and maintains the overall freshness of the product. In this way, the basil does not undergo any deterioration before processing, which occurs just hours after harvest.

Once produced, the semi-processed product is kept in cold storage. From that moment, all movements and transportation occur while scrupulously adhering to the refrigeration chain. The logistics management is prompt and scaled to the clients’ needs.

Procedure

Our procedures also involve:

  • latest generation washing, selection and processing machines. Specific supervision systems guarantee constant process quality control
  • a modern mill, unique for its type, for the grinding of the basil, which works like the mortar and pestle used in the traditional recipe, does not heat the product and extracts the aromatic components of the basil without compromising the quality
  • in-out management of deliveries and finished products in real-time with traceability guaranteed by the central computer system
  • temperature controlled insulation of processing facilities to guarantee the quality of the finished product
  • automatic proportioning of ingredients with delicate and efficient mixing systems that do not damage the product and guarantee perfect uniformity
  • filling of containers in temperature controlled environments
  • an internal analysis laboratory where every lot is subjected to chemical-physical, microbiological and organoleptic analyses to guarantee product safety and quality
  • management of 7000 pallet capacity in refrigerated storage at 0°C
